Aged Premier Cru Chablis from Thomas Pico
The 2015 Domaine Pattes Loup Chablis 1er Cru Vaillons is a characterful white Burgundy from winemaker Thomas Pico. Vaillons is one of Chablis’s renowned Premier Cru terroirs and produces Chardonnay that beautifully combines freshness, minerality, and structure.
After more than ten years of aging in the bottle, this 2015 shows a much more complex character than a young Chablis. The riper fruit is complemented by mineral and mature nuances, while the natural freshness of Chablis Chardonnay provides tension and balance.
Aroma & taste
Aromas of citrus, ripe apple, and white stone fruit are complemented by floral, spicy, and chalky mineral notes. The palate is refined and concentrated, with crisp acidity, a lovely texture, and a long, mineral finish.
Serving & foodpairing
Serve at around 10–12°C. Let the wine breathe in the glass for a while. Excellent with oysters, scallops, lobster, shellfish, refined fish dishes, poultry, and mild cheeses.
Storage potential
This Premier Cru has now reached a nice stage of bottle aging. With proper cellaring, the wine can continue to age, but it is already at an interesting stage for drinking.
