2015 Domaine Pattes Loup Chablis 1er Cru Vaillons uit Chablis
In Courgis, near Chablis, Thomas Pico produces wines with a distinct sense of terroir. His 2015 Vaillons comes from one of Chablis’s renowned Premier Cru vineyards, where Chardonnay grown on limestone-rich soils develops a sense of tension and refinement.
After more than ten years of bottle aging, this wine is sure to appeal to lovers of aged white Burgundy. The riper fruit is complemented by spicy and mineral notes, without losing the character of Chablis.
The Story of the Vintage
Thomas Pico founded Domaine Pattes Loup and opted for meticulous care in the vineyard and a hands-off approach in the cellar. In this way, he aims to let the differences between the Chablis terroirs speak for themselves.
Tasting Experience
Citrus, ripe apple, and white stone fruit, with floral and chalky notes. Refined and concentrated on the palate, with crisp acidity and a mineral finish.
Serving
Serve at around 10–12°C with scallops, fish, or poultry. Let the wine breathe in the glass for a while.
