The 2021 Château Pavie ranks among the absolute best in Saint-Émilion. As a Premier Grand Cru Classé A, Château Pavie represents the highest level of quality within the appellation and is one of the most sought-after Bordeaux wines in the world. Its exceptional location on the limestone-rich slopes of Saint-Émilion produces wines year after year with impressive concentration, refinement, and tremendous aging potential.
The 2021 vintage showcases a more classic Bordeaux style, with freshness, elegance, and expression of terroir taking center stage. Thanks to an extremely meticulous selection of Merlot, Cabernet Franc, and Cabernet Sauvignon, the result is a wine with exceptional aromatic precision, refined tannins, and perfect balance. The nose opens with aromas of cassis, black cherries, plums, violets, graphite, cedarwood, tobacco, dark chocolate, and subtle spices. On the palate, the wine is both powerful and refined, with silky-smooth tannins, impressive minerality, and an exceptionally long finish in which elegance and concentration blend perfectly.
Serve at 16–18°C and decant the wine at least two hours in advance. Perfect with entrecôte, lamb, roe deer, venison, duck, truffle dishes, and aged hard cheeses.
De naam Pavie verwijst naar de perziken die ooit op deze hellingen van Saint-Émilion groeiden. Gérard Perse verwierf het château in 1998 en investeerde ingrijpend in de wijngaard en kelder. In 2012 promoveerde Pavie tot Premier Grand Cru Classé A, een zeldzame erkenning binnen Saint-Émilion. Het koelere Bordeauxjaar 2021 vormt een interessant contrast met de hete jaren 2020 en 2022 en laat een andere kant van het kalkrijke terroir zien.
