The 2016 Château Saint-Georges Côte Pavie is among the finest vintages ever produced by this historic Saint-Émilion Grand Cru estate. Thanks to the exceptional weather conditions of 2016, the grapes ripened perfectly, resulting in a wine with impressive concentration, refined structure, and excellent balance. Château Saint-Georges Côte Pavie is known for its elegant style, in which ripe fruit, minerality, and fine tannins come together harmoniously.
The vineyards are situated on the limestone and clay soils of Saint-Émilion, a terroir renowned worldwide for its great Merlot wines. The combination of traditional viticulture and modern winemaking techniques results in a wine that is both approachable when young and capable of aging beautifully for many years. This vintage is also delivered in its original wooden six-bottle case, which enhances both its presentation and storage.
The nose opens with aromas of black cherries, plums, cassis, violets, graphite, cedarwood, tobacco, and subtle spices. On the palate, the wine is rich and elegant, with ripe tannins, fresh acidity, and a long, refined finish in which fruit and terroir remain perfectly balanced.
Serve at 16–18°C and decant the wine about one hour in advance. Delicious with grilled beef, lamb, veal, duck, game, and aged cheeses.
The 2016 Château Saint-Georges Côte Pavie has excellent aging potential of fifteen to twenty years and will continue to develop as it ages in the bottle.
