The 2018 René et Vincent Dauvissat-Camus La Forest is a Premier Cru Chablis from one of the appellation’s most highly regarded producers. The wine is made from Chardonnay grapes grown in the Premier Cru vineyard La Forest and combines concentration with the distinct minerality for which classic Chablis is known.
The 2018 vintage yielded ripe grapes and full-bodied wines. At Dauvissat, this ripeness is combined with structure, freshness, and a distinct expression of terroir. After several years of bottle aging, La Forest begins to develop additional complexity without losing its characteristic mineral character.
Aromas of citrus, ripe apple, and white stone fruit are combined with floral, spicy, and distinctly mineral nuances. With bottle aging, more complex notes develop while the wine retains its vibrancy and chalky character. The finish is long and refined.
Serve at around 10–12°C. Excellent with oysters, lobster, scallops, shellfish, refined fish dishes, poultry, and soft cheeses. If desired, let the wine breathe in the glass for a while to allow it to fully open up.
Dauvissat La Forest is not one of those Chablis wines that should only be drunk young. Good bottles can develop beautifully and gain in complexity. The 2018 vintage is currently in an interesting stage of development and, with proper cellar storage, can mature even further.
