2005 Terres des Templiers Banyuls Grand Cru Ancestral
The 2005 Terres des Templiers Banyuls Grand Cru Ancestral is a special fortified sweet wine from Banyuls, on the Mediterranean coast of France’s Roussillon region. The steep vineyards and the warm, sunny climate create a unique terroir in which Grenache ripens exceptionally well.
Banyuls is produced using the mutage method, in which alcoholic fermentation is halted by adding wine alcohol. This preserves a portion of the natural grape sugars. The Grand Cru style and extended aging give this wine its rich, complex, and distinctly mature character.
Aroma & taste
A complex aromatic profile featuring dried plums, figs, raisins, candied fruit, cocoa, coffee, nuts, and Mediterranean herbs. On the palate, the wine is rich and concentrated, with a gentle sweetness, warmth, and a long, spicy finish.
Serving & foodpairing
Serve at around 14–16°C. A classic pairing with dark chocolate and chocolate desserts, but also delicious with blue cheese, nut-based desserts, and dried fruit. Thanks to its complex, aged character, this Banyuls is also excellent when served on its own.
The story behind the bottle
Terres des Templiers is closely linked to the wine-growing region around Banyuls-sur-Mer and Collioure. The vineyards are situated on steep terraces along the Mediterranean Sea, where the grapes benefit from abundant sunshine and a distinctly Mediterranean climate. Banyuls is one of France’s historic “vins doux naturels” and is best known for its Grenache-based fortified wines.
