The steep vineyards and the warm, sunny climate create a unique terroir in which Grenache ripens exceptionally well.<\/p>\n<p>Banyuls is produced using the mutage method, in which alcoholic fermentation is halted by adding wine alcohol. This preserves a portion of the natural grape sugars. The Grand Cru style and extended aging give this wine its rich, complex, and distinctly mature character.<\/p>\n<h3>Aroma &amp; taste<\/h3>\n<p>A complex aromatic profile featuring dried plums, figs, raisins, candied fruit, cocoa, coffee, nuts, and Mediterranean herbs. On the palate, the wine is rich and concentrated, with a gentle sweetness, warmth, and a long, spicy finish.<\/p>\n<h3>Serving &amp; foodpairing<\/h3>\n<p>Serve at around 14\u201316\u00b0C. A classic pairing with dark chocolate and chocolate desserts, but also delicious with blue cheese, nut-based desserts, and dried fruit. Thanks to its complex, aged character, this Banyuls is also excellent when served on its own.<\/p>\n<h3>The story behind the bottle<\/h3>\n<p>Terres des Templiers is closely linked to the wine-growing region around Banyuls-sur-Mer and Collioure. The vineyards are situated on steep terraces along the Mediterranean Sea, where the grapes benefit from abundant sunshine and a distinctly Mediterranean climate.
